Happy Thursday bloggies! How excited is everyone getting for the weekend?? BEST believe that I am beyond ecstatic, as our flight outta town leaves tomorrow morning at 5:45am! By lunch time, I’ll dining oceanside! (Supertroopers, anyone?? The schnozzzberries taste like schnozzberries!).
The last few days have been a total blur of working, laundry, working, being stressed about work, working extra, packing, and work. Oh, and I guess I have been eating, too. Snap.
Tuesday, I headed off to my worksite presentation, pumped & ready to go. Got there, popped into the office of the lady who coordinates the presentations with my organization and she looked at me with blank stare. Realized there had been some email miscommunication and she didn’t know I was coming. So there was no presentation, and I left feeling very very frustrated/overwhelmed/blahblah silly girl stuff. After calling TJ and crying listening as he counseled me, I cheered up a little bit and headed to the gym. I don’t know if it was all the frustration/stress that got to me, but at the gym it was like someone else had taken control of my body. In a GOOD way.
I am NOT a runner, friends. I may have ran track in college, but to me it was not running. It was sprinting/jumping/throwing. Long distance running has never been my thing. Usually on the treadmill I go for time and alternate between low speeds & sprints. Well Tuesday, I hopped on the treadmill, and suddenly, 30 minutes later, I was hopping off. I shocked myself and ran 30 minutes straight at 6.5, which I think was around 9:30-9:45min/mile pace?? Wudda fuuddddge?? Needless to say I was drenched in sweat and loving every minute of it. Maybe stress isn’t such a bad thing after all! I did a super quick total body lifting circuit and finished off with 15 min on the stair stepper. Hot damn, I was a schweaty mess. High tailed it home and threw together this beaut of a dinner.
Poblanos Rellenos
4 large poblano peppers
8 oz ground turkey
1/2 bell pepper, diced
1/2 white onion, diced
2 cloves garlic, minced
2-6 jalapenos, minced (I used 6, I <3 spicy)
2 tsp cumin
2 tsp chili powder
S&P to taste
1/2 tbsp butter
2 tbsp flour
3/4 cup milk
1 cup reduced fat shredded cheese (i used pepperjack)
1. Preheat oven to 425. Sautee diced pepper, onion, garlic & jalapenos 2-3 minutes over medium-high, or until garlic is fragrant. Make a well in the veggie mix & add ground turkey. Cook until just browned.
2. Make a well in the meat/veggie mix and melt butter. Once butter is melted, sprinkle flour over butter & whisk. Cook until lightly browned.
3. Slowly add milk to butter/flour mix, whisking thoroughly to remove lumps. Once mixture is blended, add in shredded cheese.
4. As cheese melts, blend whole mix together & reduce heat to medium-low; let lightly simmer for 2-3 minutes. Remove from heat & cool. Meanwhile, cut “T” shape into poblanos- once long slice down the middle, and one more across the top. Remove core & seeds, leaving top.
5. Stuff peppers with cooled meat/cheese/veggie mix. Enjoy licking spill over off of your fingers. Place filled peppers in lightly sprayed baking dish, and roast in oven 20-30 minutes.

I topped the peppers with some crushed tortilla chips & a SMIDGEN more cheese. Sexy.

Topped with plain yogurt, hot sauce (def went back for more hot sauce), and served with brown rice/canned corn blend. Ole!! I may or may not have licked my plate clean. I’ll never tell
Wednesday breakfast & lunch….You are probably as sick of seeing these every day as I am sick of eating them everyday. Just trying to clear out the fridge before we leave, I promise that’s the ONLY reason.

Do yourselves a favor peeps, and never, ever, EVER buy canned split pea soup. Trust me on this one. It was not worthy of my $1.49. At least I had my jumbo spinach salad to fall back on.
After another crazy hectic day at work, tying up loose ends before vacay & stressing about how much work will accumulate while I’m gone, I headed off to the gym. Halfway there I received this:
Drink?? OK, you twisted my arm. GOSH I’m a tough sell. But really, I justified it by the fact that Wednesday would just be my day off this week, since the line of resorts we’re staying typically has a nice gym and I am sure this particular one is no exception, so I can easily get in a good workout every day we are gone.
Oh and no, I was not eager for a drink at 11:08 AM…the time on my phone gets screwed up with I connect it to my laptop, since EVERY TIME I turn my computer on, the clock/calendar reverts back to April 6, 2000 and 12:00 AM. I wonder what happened on that date that is so significant to my laptop?? Hmmmm….
ANYWAY I met Teej at FireFly a fantastic little place featuring amazing wines, martinis & all types of small plates & sushi. Perfect. I had my heart set on a fat glass of juicy red wine, but when I found out the special on Wednesdays is $2.50 house chardonnay for ladies, well, shoot, I couldn’t turn that down.
Glorious.
We tried out the Jamaican Jerk Calamari
This was SO SO good. Best calamari I have EVER had. Perfectly tender, super spicy, great Jerk seasoning, and they were tossed with fresh diced tomatoes & banana peppers. SOOO delicious.
So after our pre-vacation celebration outting, we headed home and finished packing. 3 hours later, it was 9:45 pm and I was so pooped, and completely full of chardonnay & calamari still. I watched about .05 seconds of Criminal Minds and crawled into bed. A good night, for certain.
This morning, I had to round up my luggage, my carry on, my shower bag, Jules, Jules crate & Jules food, food bowl, toys, treats & leash. I dropped her off at my parents and headed to work. The boys- Tyson & Jax- are staying with TJ’s parents. Kind of sad to split them up, but they are a lot of work and it just is easier this way. Breakfast definitely reflected the lack of food in the house.
Last english muffin, light veggie cream cheese, and a strawberry protein shake. WEAK. It will do though.
Lunch will probably be a salad made at the local grocery store by my office. I’ll spare you the boring pick of lettuce & lame toppings. I also brought an apple & one of these

After work, I’m rendezvousing with TJ & Derek, and we are headed to Grand Rapids (~2 hours away) for the night. We fly out bright & early! Crazy next 12 hours! See you all soon
