Seafood in the Snow

Happy humpday friends! Want to find the easiest way to make your week fly by? Take a week off. Wow I can’t believe how much catching up I still have to do and I even did some work while I was gone!! Sheesh.

And in other news….it’s SNOWING here today!! WAHOOOOO. Yes, I know I am insane, and in a month or two I will be cursing the snow and wishing it would go away but something about that first snowfall is just so magical. It also signals the official start to the holiday season, and, like a lot of you other bloggies, I am OBSESSED with winter holidays. I am already planning our Christmas tree, and I can’t wait to go crazy decorating the house! Isn’t it amazing how much joy ornaments, wreaths, snowmen and glittery snowflakes can bring?

Although I am so excited to see snow and talk winter, this week has been all about bringing warm weather & ocean eats back home with us. I will spare you my eats before my Monday night grocery shop, because they were barebones and very very boring. I met up with my honey for some grocery shopping after work and we fully stocked the fridge/cupboards to the tune of $200. OUCH. But that should hopefully last a good 2 weeks. Considering two of us will be eating homemade breakfast/lunch/dinner AND snacks, I’d say that’s a pretty good job! about $7 a day per person. Definitely could do worse.

When we saw crab legs were on sale for $5.99/lb, I knew exactly what we were doing for dinner!

Steam, baby steam! (also please excuse dirty dirty stove top. That thing is about 800 years old and I am pretty sure it will never ever again be totally clean.)

So into a pot with an inch of boiling water the legs went. Once they were just a little defrosted, I crammed them down, threw a lid on and let them steam for about 12 minutes. Mean while, in a 425 oven I roasted some okra that I tossed with salt, pepper & old bay. I also microwaved a green bean/carrot/potato blend that I later tossed with a teeny tiny pat of smart balance, crushed red pepper, and garlic salt. Dinner in >15 minutes. Seriously. So good. Something about the process of eating crab legs is so satisfying, enjoyable, sexy and fun. Perfect end to a hectic Monday.

Last night, I wanted to continue the seafood theme with a bag of shrimp that have been crying out from the freezer for way too long. Stir frying is such a great way to throw together a quick dinner, use VERY little extra fat and its usually pretty much fail-proof! This recipe, in particular, is a winner in my opinion.

Spicy Citrus Shrimp Stir Fry

1 lb thawed pre-cooked shrimp, tails removed

1 tsp Sesame/canola/peanut oil

3 garlic cloves, minced

1 tbsp minced ginger

1 red bell pepper, thinly sliced

1/4 large white onion, thinly sliced vertically

1 cup snow peas, ends trimmed

1 cup sliced mushrooms

1/4 cup flour

2 tbsp rice wine vinegar

2 tbsp soy sauce

1 tbsp chile-garlic paste (Sriracha or Sambal Oelek)

1 tbsp Apricot preserves

1/4 cup orange juice

1/2 tsp orange zest

1 tsp lime juice

1. In skillet/wok over high heat, add oil and stir fry garlic & ginger 30 sec-1 min, or just until fragrant. Add onion and stir fry 1 – 2 minutes. If pan starts to dry out, add a splash of water.

2. Add peppers, mushrooms & peas. Stir fry for 3-5 minutes. Meanwhile, combine rice wine vinegar through lime juice & whisk together.Picture 014 Picture 011

3. Once vegetables are slightly soft, but still crisp, remove from wok/pan. Add shrimp. Let sit for a couple minutes, you really want to give them a crust. Don’t worry about any flour sticking to the pan, it will serve to thicken the sauce. Flip shrimp once and sear for another minute. Add sauce, turn heat down to medium-high and scrape up all bits on the bottom of the pan. Add vegetables back, toss to coat with sauce, & serve!!

I scooped mine over some spaghetti squash & topped with Sriracha & crushed peanuts. YUMMMMMMMM. SO good. And had lots of leftover!

Alright, break time is over, its back to the grind for this girl! And I’m pretty sure I smell the lunch bought for my by our company for being so patient through all the H1N1 maddddnesssss….yessir!

PS- Anyone have any tips on taking action shots when the steam is coming up off my food? Flash makes it worse, but without flash it’s blurry :( Help??

I haven’t had crab legs in a while and you just got me craving them sooooo badddd :) I agree with stir fry being such a great go-to for a healthful meal, and I love your sauce recipe too!!! I can’t believe you have snow already, here I am complaining that last night I finally had to turn the heat on…. :/ We tend to get more of an icy mess around here than real fluffy fun snow, but maybe this year will be different?!

    • Haha, I hope crab legs are on sale near you, then! No snow on the ground, it all melted in the sun, but it is fun to watch the flakes fall! I hope you get more fluff than ice this year, too! I HATE driving when it gets icy. I’m like Dr Jekyll/Mr Hyde…mad crazy driver in the summer, paranoid grammy driver in the winter. Ha.
