Workin for the Weekends

Bon jour mon bel ami! How is the week going for all of you? Is tres TRES busy for moi! I have been buried under paperwork for the last two days…I’m just finally starting to get some breathing room. Gahhh!

 

And, of course, it has been snowing cats and dogs penguins and polar bears non stop. You know you’re in northern michigan when the snow plows are still out in full force at 5 pm.

 

Last week I didn’t get a chance to tell you all about the awesome stir fry dinner we had. Stir frys are hands down my favorite for nights when nothing sounds good/you’re pressed for time/you dont feel like doing dishes/you just want a big bowl of COMFORT. This was one of my favorites thus far.

 

Peanut Chicken Noodles

2 boneless, skinless chicken breasts, diced into 2 inch cubes

2 tbsp whole wheat flour

2 tbsp garlic powder

1 tbsp ground ginger

1/2 yellow onion, sliced vertically

1/2 green pepper, diced

8 baby bella mushrooms, sliced

1 can water chestnuts

2 cups sugar snap peas

2 carrots, sliced

4 oz whole wheat spaghetti noodles, prepared as indicated on the box.

 

Sauce

1/4 cup low sodium chicken broth

3 tbsp low sodium soy sauce

1 tbsp rice wine vinegar

1 tsp sesame seed oil

2 tbsp peanut butter

1. Preheat wok to medium-high. In a large ziploc bag, combine chicken, flour, garlic and ginger. Seal bag & shake to coat the chicken. Add chicken to wok, arranging in a single layer. Sear for 2-4 minutes- DO NOT STIR! Resist the temptation!

2. Flip chicken & sear on other side for another 2-3 minutes. Remove from pan. Turn heat to high. Prepare sauce by whisking together all ingredients. Set aside.

3. Add onions, carrots, mushrooms and bell pepper. Stir fry 3-4 minutes. Add peas & water chestnuts and stir fry 1-3 minutes (this all depends on how crispy/soft you like your veggies. we like crispy). Add sauce & toss to coat. Reduce heat to medium, and add back chicken. Let cook an additional 2-3 minutes, or until sauce has slightly thickened.DSCN2390DSCN2391DSCN2393DSCN2392

 

4. Serve over spaghetti & top with scallions and chopped peanuts.

and unpictured COPIOUS amounts of sriracha. OBVS.

 

INHALE slowly SAVOR your delicious bowl (or plate…) of peanutty noodles.

 

Clean up your ONE pot and enjoy things like trashy reality tv…

  7. Love the stir fry dinner! Isn’t there something just theraputic about sizzling and stirring in a hot wok that makes it so much fun (or am I just on crazy pills?! ;) )

    I can’t believe your car is buried in snow holy cow! I have never seen that much snow before in my life I don’t think, that is nuts – stay warm girlie :) Love the pups outfits too btw – time for me to head to Targizzle and hope my check doesn’t bounce thanks to my last recent ginormous purchase :P

  10. I can’t say exactly what looked better – the car or the peanutty noodles!! OK, I decided – I’m going with the Holiday puppies (altho, I will be trying your recipe for sure – and you know Hunkie will love it being the p’nut freak he is).
