Hello bloggers & bloggettes! Merry ALMOST Christmas to ya! How was the weekend for everyone? Mine was NUTSO- three parties in three days! So, consider this the highlight reel- I will try to sum up the past four days in as few words as possible. You’re welcome ;)

 

Thursday was the big hair day..obviously you know now that I did stay blonde and I let Niki give me bangs- something I have NEVER had in my entire life!! En route to my appointment I picked us up some drinks to fuel my 3 hour foiling process. An eggnog latte with a shot of butterscotch for her (DELISHHHH) and a sugarfree chocolate almond latte (literally THE BEST drink I have ever put in my mouth. ok ok best COFFEE DRINK.)

SO, as you can see, it was SEVEN by the time I got done and still had to stop to pick up supplies for the weekend get togethers. By the time I got home, TJ was wrapping gifts like a maniac and I joined in to try to make a dent in our HUGE present stock load. We enjoyed a home cooked store bought dinner-

Added some mushrooms, onions, red peppers and a sprinkling of cheeeese. I had two slices smothered in crushed red pepper and some steamed broc with fresh parm cheese. Perfect.   DSCN2515

 

Friday I had an ALLLL DAYYY staff meeting that doubled as our Xmas party. Really?! Yeah. Really. We got to spent 8 hours working for our party, JEALOUS??? Didn’t think so. Oh well. The food was…umm..not what I would have imagined to be ideal for HEALTH EDUCATORS…picture a menu full of burgers, fries, chicken liver pate (wtf…), and there was even a section called “FRIED VEGETABLES” that was about 10 items long.

 

I went with a bowl of chili and a side salad. Not good. But it did hold me over. After work/party..although the only partying done was when the boss picked up the check for lunch??..I drove into town to meet TJ at HIS work party. It was at Firefly (remember when we went there last??). Now THAT’S what I’m talkin ‘bout. I enjoyed two wonderous glasses of my new favorite wine-

After stopping at home and running the pups for a bit, we headed over to Brent & Ashleys for “cousin christmas.” ALWAYS fun with them. We snacked, we exchanged gifts, we played Yahtzee, and then walked to the bar that is a block from their house. So dangerous.

Ohhh boy. Ummm so needless to say I felt a little rough Saturday morning. But too bad, there was work to be done! We had Tj’s family christmas part 1, and needed to bring appetizers. I made buffalo chicken dip & sausage/mushroom/spinach stuffed phyllo shells as WELL as an apple pie cheesecake. Alas no pics..but they were all awesome so I will make again and document it the next time ;)

Sunday was Xmas party with Tj’s family part 2. I don’t have any pics, I so sorry. But I think the massive amounts thus far more than make up for it. Basically, we had some wine, an amazing dinner featuring prime rib, ham, garlic mashed potatoes, almond green beans, pasta salad, and a spinach/mandarins/onion/poppyseed dressing salad. And I ate it all. Then there were gifts & desserts (most notably the caramel puffs- which you will be seeing again here, the s’mores bars- ditto, and peppermint kisses). Home by 8, passed out by 9. The end of the ridic weekend.

 

Nothing too exciting Monday- lunch was a Red & Green salad-

Spinach, cukes, sprouts, red peps, slice of turkey, slice of roast beef, slice of bacon. Using that shiz up!

 

And, in celebration of some GREAT job news for both TJ & myself, was a recipe I am less than impressed with so maybe I will share after some tweaking. Basically, though, homemade Moules Frites aka Mussels and Fries.

And that brings us to Tuesday! Plans include a couple more hours of work, an afternoon spent finishing my xmas shopping, a serious sweat session at the gym and NO IDEA yet for dinner. Wish me luck!!!!!

My Head Might Just Spin Right Off….

Ever have one of those weeks where you constantly walk around slightly dazed/ feeling frantic with the to-do lists spinning around in your brain, multiplying faster than the Duggar Family?

 

That’s been me the past MONTH. No me likey. I really hate feeling like there is more to do than there is time to do it in! HURRY UP VACATION!

 

Lunch yesterday was inhaled in .05 seconds-

Leftover crab cake over spinach, red onion, tomato & pepperoncini tossed in soy/balsamic/brown sugar/dijon mixture (<—fastest/easiest dressing ever. no oil even needed). Baby apple & water to go with.

 

I had a hair appointment after work. Niki LOVES it when I come in, ha! I have a lot of thick curly hair so coloring of any type always takes a couple hours. But in the end, I think it’s win-win for both of us. I get to sit and relax and chat with my BFF for 2 hours, and she gets and awesome shoulder work out!

So after my hair appointment (I went for more blonde !) I ran to the mall to run last minute errands/pick up some new vacay clothes. Did you read my tweet about shopping as cardio?? Anyway, I hit the jack pot at Charlotte Russe…TONS of stuff on clearance for 4.99!! I got 6 tops on sale, a few basics for work, and a bunch of jewelry & belts for $90. I love sale shopping.

 

I FINALLY made it home around 8 pm, oops, and found my CRABBY  hungry boyfriend impatiently waiting on the couch. I threw out my fiesta dinner plans (rescheduled for tonight) and tossed something in under 20 minutes.

Boiled whole-wheat pasta, added frozen peas during last minute. Sauteed onion, garlic & mushrooms. Made a roux, added skim milk. Threw in pre cooked shrimp. Strained pasta, tossed all together, dished up, topped with parm & crushed red pepper. TA-DA!

Oh and I can’t forget my ghetto breadstick, aka a hot dog bun with a touch of butter & garlic powder, popped under the broiler till crispy. Because that’s just how I roll.

Oh well. Nobodies perfect, eh?

Back to the Grind…

Morning my webbie friends! How’s your Monday so far?? Mine has been pretty decent, not going to lie..! The sun is out in full force, my work load is significantly lighter, I leave for vacation in four days…

WAIT..WHAT!!!?

Yes that’s right, a little fall vacay and I couldn’t be MORE stoked. I’m leaving Friday morning with TJ and four other friends. We are staying at a GORGEOUES resort for a WHOLE WEEK! Yahoo! Super stoked for my FOURTH vacay with the man :)

So excited! I will be bringing my lap top for work while there, so don’t worry, I’ll share all the good times with you. You can vacation vicariously through me!

Now back to your regularly scheduled programming….Friday by lunch time my body was still feelin OFF, and I packed the perfect lunch to quell the nasty feelings.

Moroccan curry couscous over spinach that I tossed with soy, sesame oil and rice wine vinegar. Perfecto.

After work, I hit up the ArcTrainer at the gym for 60 minutes and passed on any strength training. I can’t believe how much BETTER I felt after getting my sweat on. Like a whole new woman!

TJ and I met a couple friends up at the local dive for drinks/dinner. I started off easy with this guy

Frost brewed and delish Coors Light, with Ash throwin out the peace sign in the background! For dinner, I opted for the salad bar and a half order of wings. Makes sense right?? Apparently, 12 hours of no spicy in my life were too many.

Greens, red peppers, red onion, questionable cukes, PICKLES!!, sunflower seeds, cherry tomatoes and a nibble of pasta salad. All doused in red wine vinegar & pepper. Not a bad selection for a tiny bar/restaurant in the middle of nowhere!

The main attraction. I ate them all, obvs. I love it when my mouth is on fire.

Tj stayed out with all the wild kids, and the old lady (me) was in bed by 11:30. Loved it.

Saturday was Sweetest Day! Now, rumor has it this is a “holiday” only celebrated in the Great Lakes regions….? But I love it! It’s a candy&card type celebration of love and since cheesy is my other OTHER middle name (spicy being the other), I eat it right up!

I made my sweetie some fried eggs with a generous sprinkling of cheese, some center cut bacon, and jam heart toast! My plate was not as pretty- no cheese, broken yolk, no hearts…sigh. The things we do for love.

After spending a couple hours on laundry & cleaning (yay. not.), we went out to celebrate being Sweethearts. The day was filled with adventures. We drove out to prime wine country to our favorite winery which happens to be attached to a bar. We started at the bar, and watched the Michigan State game. I had wine. Duh?

After a glass of wine and 2.5 hours of football (STATE WON GO TEAM), it was snack time. Sadly, we were VERY unimpressed.

“homemade” tortilla chips with sad little sides of salsa (that were FROZEN!!), and TJ ordered smelt. I tried one smelt and got a bone stuck in my throat! Even though the chips were sort of sad, they were safe so I stuck with them.

Next up, wine tasting!!

Unfortunately, the winery was sold out of all our fav wines and it was crazy busy so we set off in search of our next stop.

The casino!! Hahaha. Normally I am not a huge fan of wasting money on machines/games (HELLO, PUT THAT $$$ TOWARDS SHOES! PURSES! JEANS!), but the mood was right and TJ gave me $20 to bribe me show his love for me on Sweetest day.

And I won!!! I won $100 on ONE penny slot machine! Amazin! After about an hour, we cashed out and left up about $80. Not bad, eh!

I had a vodka & diet ruby red (what bars carry that! awesome) and we split a bowl of chicken jalapeno soup (minus the jalapenos? seemed more like creamy chicken vegetable to me.) and an order of crab stuffed mushrooms. These. were. to. DIE. for!!! SOO good.

So after our day of shenanigans, we headed over to TJ’s sisters house for a little fam get together for TJ’s moms birthday! The spread was fab. However, my camera was acting up so I only have a couple pics…

Spent a little time reminiscing…Sunday was Niki & Shawn’s 1 year anniversary! I looked a few pics to remind myself how great & special that day was…

So after trippin down memory lane, I went on with my day. I had plans to go to the gym & run errands in town but instead spent 4 hours rearranging furniture, lugging loads of things up and down two flights of stairs, and POWER cleaning the bed room & the spare bed room. That HAS to count for something right?!

Either the “exercise” threw my appetite off or it was the indulgences of Saturday that messed me up but suddenly it was 1:30 pm and I was not hungry in the least. I snacked my way through the afternoon, grabbing whatever sounded good at the time.

and few unpictured bites of TJ’s chili. And by TJ’s I mean my boyfriends, NOT Trader Joes. No such thing as Trader Joes or Whole Foods in my parts of the wilderness. Maybe someday I will visit these magical lands of foodie fantasies….

Dinner was SUPERB!!! I was brainstorming what I could use up in the fridge/cupboard before we leave for a week, and this is what I came up with.

Seafood Cakes with Cajun Tartar Sauce

8 oz canned crab

8 oz cooked shrimp, chopped

1/2 bell pepper, diced

1/2 medium white onion, diced

2 stalks celery, diced

2 large cloves garlic, minced

1 tbsp Cajun seasoning

1 whole egg + 1 egg white

2 tsp dry mustard

2 tbsp Sherry

1 tbsp Worchetehsheshire sauce :)

2 tbsp stone ground mustard

1 c whole wheat panko

For Sauce:

1/4 cup nonfat plain yogurt (use greek if you have it!!)

2 tbsp minced green onion

2 tbsp stone ground mustard

1 tsp honey

1 tsp cayenne

1 tsp lemon juice

1. Over medium heat, sweat pepper, onion, celery & garlic, about 2-4 minutes. Add Cajun seasoning, salt & pepper, and cook another 2 minutes. Remove from heat & let cool.

2. In a bowl, whisk together eggs, mustards, sherry & worcestershire. Fold in panko, crab, shrimp & vegetables.

3. Form mixture into cakes. Chill in fridge at least 30 min.

I got 7 burger sized patties out of the mix. Probably could have gotten 8. I imagine this would make 12-15 mini cakes?

4. While cakes are chilling, prepare sauce. Whisk all ingredients together & let chill.

5. Preheat skillet to medium high heat. Coat with non stick spray & cook cakes for 4-6 minutes on first side, flip, and cook 2-3 minutes more. Top with sauce & enjoy!!

On the side I heated up a green bean/carrot blend, and made some quick oven fries- wedged red skin potato, tossed with a bit of EVOO, salt, pepper & crushed red pepper, baked at 450 for 30 min.

DDEEEElicious. For REAL. If you ever are wondering what the heck to do with canned crab, this my friends is the way to go.
